  • Pink candy melts or pink frosting (for noses, optional)
  • Black sprinkles or edible glitter (optional)

Instructions

  1. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes with an electric mixer.
  2. Add the egg and vanilla extract, then beat until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed until a soft dough forms. Do not overmix.
  5. Lightly flour your work surface and rolling pin. Roll the dough out to about ¼-inch thickness.
  6. Press a cat-shaped cookie cutter firmly into the dough and lift straight up. Place cut cookies onto prepared baking sheets, spacing them about 2 inches apart. Gather scraps, re-roll, and repeat until all dough is used.
  7. Preheat oven to 350°F (175°C). Bake cookies for 8-10 minutes, or until edges are just barely golden. Centers should still look soft.
  8. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. While cookies cool, make the frosting: In a medium bowl, whisk together sifted powdered sugar, 3 tablespoons milk, and vanilla extract. Add more milk as needed for a smooth, spreadable consistency.
