This one-bowl banana bread with toasted walnuts is incredibly moist, tender, and packed with flavor. It’s the easiest, most foolproof recipe you’ll ever make, perfect for breakfast, brunch, or dessert.

  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup walnut halves, toasted and roughly chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or nonstick spray. Line with parchment paper, leaving overhang on the two long sides.
  2. Toast the walnuts: Place 1 cup of walnut halves in a dry skillet over medium heat. Shake the pan every 30 seconds. After about 3-4 minutes, when fragrant, transfer to a plate to cool. Once cool, roughly chop. Set aside ¼ cup for topping if desired.
  3. Mash the bananas: In a large mixing bowl, mash 3 very ripe bananas with a fork until mostly smooth (some small lumps are fine). You should have about 1½ cups.
  4. Add the wet ingredients: Pour in ½ cup melted unsalted butter, ¾ cup granulated sugar, 1 large egg, and 1 teaspoon vanilla extract. Stir with a wooden spoon or whisk until combined.
  5. Add the dry ingredients: Sprinkle 1½ cups all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt over the wet mixture. Stir gently until just combined. Do not overmix.
  6. Fold in the walnuts: Add the chopped walnuts (reserving some for the top if desired). Fold with a spatula using just 4-5 strokes.
  7. Transfer to the pan: Scrape the batter into the prepared loaf pan. Spread evenly. If using reserved walnuts, sprinkle on top and press in gently.
  8. Bake for 55-65 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly after 40 minutes, tent loosely with foil.
  9. Cool properly: Let the bread cool in the pan for 10 minutes. Then lift out using the parchment paper and transfer to a cooling rack. Cool completely before slicing (at least 1 hour).

Notes

For best results, use very ripe bananas with brown spots. Toast walnuts for deeper flavor. Do not overmix the batter. Let the bread cool completely before slicing to prevent crumbling. The bread tastes even better on day two.
