This browned butter banana bread is a revelation, with a nutty, caramelized flavor that transforms simple ingredients into something truly special. It’s quick, easy, and perfect for using up overripe bananas.

Ingredients

Scale
  • 1/2 cup (1 stick / 113 grams) unsalted butter
  • 3 medium ripe bananas (about 1 1/2 cups mashed)
  • 1/2 cup (100 grams) granulated sugar
  • 1/2 cup (100 grams, packed) light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (220 grams) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup optional mix-ins (chopped walnuts, pecans, or chocolate chips)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Grease exposed sides.
  2. Brown the butter: In a light-colored saucepan over medium heat, melt the butter, stirring constantly. Continue until the milk solids turn golden-amber and the butter smells nutty. Immediately remove from heat and pour into a heat-safe bowl. Let cool for 10 minutes.
  3. In a large bowl, mash the bananas with a fork until mostly smooth with a few lumps.
  4. Add the cooled browned butter, granulated sugar, and brown sugar to the bananas. Whisk until combined. Add eggs and vanilla, whisk until glossy and emulsified.
  5. In a separate bowl, whisk together flour, baking soda, and salt.
  6. Pour dry ingredients into wet ingredients. Fold gently with a rubber spatula until just combined (a few lumps are fine). Fold in optional mix-ins if using.
  7. Pour batter into prepared loaf pan and spread evenly. Bake for 50-60 minutes, checking at 45 minutes. If top browns too quickly, tent with foil. Bread is done when a toothpick inserted in center comes out with a few moist crumbs.
  8. Cool in pan on a wire rack for 15 minutes. Use parchment to lift loaf out and transfer to rack. Cool completely before slicing (about 1 hour).

Notes

Don’t walk away from the butter while browning—it can burn in seconds. Overmixing the batter will make the bread tough. Let the bread cool completely before slicing to avoid crumbling. For best flavor, serve on day two.
