Ingredients

Scale
  • 2 cups cooked, shredded chicken (rotisserie chicken works great, or use leftover grilled chicken)
  • 1/2 cup Buffalo wing sauce (preferably Frank’s RedHot)
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper, to taste
  • 12 slider buns (brioche buns or Hawaiian rolls)
  • 1/2 cup crumbled blue cheese
  • 1/4 cup ranch or blue cheese dressing (optional)
  • 2 tablespoons melted butter (for brushing buns)
  • 1 tablespoon sesame seeds or everything bagel seasoning (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Shred the chicken into bite-sized pieces using two forks.
  2. Heat olive oil in a large skillet over medium-high heat. Add shredded chicken in an even layer and cook undisturbed for 3-4 minutes until golden and crispy. Stir and cook for another 2-3 minutes.
  3. In a small bowl, whisk together Buffalo wing sauce, 2 tablespoons melted butter, garlic powder, and onion powder. Taste and adjust heat if desired.
  4. Pour the Buffalo sauce over the crispy chicken in the skillet. Toss to coat evenly and let simmer for 1-2 minutes until sauce thickens slightly. Turn off heat.
  5. Slice slider buns in half horizontally. Place bottom halves cut side up in a baking sheet or casserole dish.
  6. Spoon Buffalo chicken mixture evenly over the bottom buns. Sprinkle crumbled blue cheese over the chicken. Drizzle with ranch or blue cheese dressing if using. Place top buns on.
  7. Melt remaining 2 tablespoons butter and brush generously over the tops of the buns. Sprinkle with sesame seeds or everything bagel seasoning if desired.
  8. Bake for 10-12 minutes until buns are golden brown and cheese is melted and bubbly.
  9. Let sliders rest in the pan for 2-3 minutes before serving. Cut into individual sliders if baked as a slab.

Notes

Don’t skip the crisping step for the chicken—it adds essential texture. For sturdier buns, toast them lightly before assembling. Let sliders rest after baking to prevent filling from sliding out. Adjust heat by using mild sauce or extra butter. For a vegetarian version, substitute chicken with chickpeas or cauliflower.
