  • 1 ½ cups (300g) granulated sugar
  • 3 large eggs, room temperature
  • 3 cups (360g) all-purpose flour
  • 2 teaspoons (8g) baking powder
  • ½ teaspoon (3g) baking soda
  • 1 teaspoon (5g) salt
  • 2 teaspoons (5g) ground cinnamon
  • ½ teaspoon (1g) ground nutmeg
  • ¼ teaspoon (0.5g) ground cloves (optional)
  • 1 ½ cups (355ml) apple cider (unfiltered preferred)
  • 1 teaspoon (5ml) vanilla extract
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Generously grease a 10-cup Bundt pan with baking spray containing flour.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves until evenly combined. Set aside.
  3. In a stand mixer or with a hand mixer, beat softened butter and granulated sugar on medium speed for 3-4 minutes until light and fluffy. Scrape down sides halfway through.
  4. Add eggs one at a time, beating well after each addition until smooth and glossy.
  5. Add vanilla extract and apple cider. Beat on low speed just until combined (batter will look thin and slightly lumpy).
  6. With mixer on low, add dry ingredients in three additions, mixing just until flour disappears after each. Do not overmix. Use a spatula to fold batter from bottom up to ensure no dry pockets remain.
  7. Pour batter into prepared pan and spread evenly. Tap pan gently on counter a few times to release air bubbles.
  8. Bake for 50-55 minutes, until a toothpick inserted in the thickest part comes out clean or with a few moist crumbs. Top should be golden and spring back when lightly pressed.
  9. Cool in pan on a cooling rack for 15 minutes. Then invert onto rack and lift pan off carefully. If cake sticks, let cool another 5 minutes before trying again.
  10. Cool completely (at least 30 minutes) before dusting with powdered sugar just before serving.

Notes

For best results, use room temperature eggs and butter. Grease the Bundt pan thoroughly, especially in crevices. If using a 9×13-inch pan instead, bake for 35-40 minutes. The cake tastes even better the next day. For a dairy-free version, use vegan butter sticks (not spreadable margarine). For gluten-free, use a 1-to-1 gluten-free flour blend and add an extra tablespoon of cider.
