  • 4 boneless, skin-on chicken breasts (about 6–7 ounces each)
  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 teaspoon salt
  • ½ teaspoon black pepper, freshly ground
  • 1 tablespoon olive oil
  • ½ cup chicken broth
  • Optional: 1 lemon, sliced

Instructions

  1. Preheat your oven to 400°F (200°C). Give it a full 15-20 minutes to come to temperature.
  2. Make the herb butter. In a small bowl, combine the softened butter, minced garlic, parsley, thyme, rosemary, salt, and pepper. Mix until everything is evenly distributed.
  3. Prep the chicken. Pat the chicken breasts dry with paper towels. Place them on a cutting board and gently loosen the skin with your fingers, creating a pocket between the skin and the meat.
  4. Stuff the butter. Take about 1 tablespoon of herb butter and slide it under the skin of each breast. Use your fingers or a small spatula to spread it evenly.
  5. Season the outside. Rub the remaining herb butter over the top of the skin. Drizzle with olive oil and give it a final sprinkle of salt and pepper.
  6. Arrange in the dish. Pour the chicken broth into the bottom of your baking dish. Place the chicken breasts skin-side up, leaving a little space between each one. If you’re using lemon slices, tuck them under the chicken.
  7. Bake. Place the dish in the preheated oven and bake for 25-30 minutes, depending on the thickness of your breasts. The internal temperature should reach 165°F (74°C) when measured at the thickest part.
  8. Rest. Remove the chicken from the oven and let it rest in the pan for 5-10 minutes.
  9. Serve. Transfer the chicken to a platter and spoon some of the pan juices over the top.

Notes

For best results, let the butter come to room temperature before mixing. Don’t skip the resting period after baking. Use a meat thermometer for perfect doneness. If the skin browns too quickly, tent loosely with foil for the last 10 minutes. For thicker breasts (over 1.5 inches), add 5-7 minutes; for thinner ones, check early.
