A quick and easy appetizer featuring sweet grilled peaches, creamy burrata, and crunchy toasted baguette, perfect for family snacking or summer entertaining.

Ingredients

Scale
  • 1 French baguette, sliced into 1/2-inch thick rounds (about 20–24 slices)
  • 3 tablespoons extra-virgin olive oil, plus more for drizzling
  • 1 clove garlic, peeled and halved
  • 3 ripe but firm peaches, halved and pitted
  • 8 ounces burrata cheese, at room temperature
  • 1 tablespoon honey
  • 1/4 cup fresh basil leaves, thinly sliced
  • Flaky sea salt, to taste
  • Freshly cracked black pepper, to taste
  • 2 tablespoons chopped pistachios or toasted pine nuts (optional)

Instructions

  1. Preheat your grill or grill pan to medium-high heat (about 400°F / 200°C).
  2. Cut each peach in half and remove the pit. Brush the cut sides lightly with olive oil.
  3. Place the peaches cut-side down on the hot grill. Cook undisturbed for 3-4 minutes until grill marks appear. Flip and cook for another 2 minutes on the skin side. Transfer to a plate.
  4. Brush both sides of the baguette slices with olive oil. Grill for 1-2 minutes per side until golden brown and crispy.
  5. Rub one side of each grilled bread slice with the cut side of the garlic clove while still hot.
  6. Arrange the toasted bread on a serving platter. Tear the burrata into pieces and place a piece on each slice.
  7. Slice the grilled peach halves into thinner wedges if desired, then place 1-2 wedges on top of the burrata on each crostini.
  8. Drizzle with honey, sprinkle with fresh basil, flaky salt, and cracked black pepper. Add nuts if using. Serve immediately.

Notes

For best results, bring burrata to room temperature before serving. Watch the bread closely as it burns quickly. Grilled peaches can be made ahead and stored in the fridge for up to 3 days.
