  • 1 tablespoon white vinegar
  • 3 tablespoons mayonnaise
  • 1 teaspoon yellow mustard
  • 1 tablespoon pickle juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • 12 pitted black olives
  • 1 small jar pimentos (or a small piece of red bell pepper, finely diced)

Instructions

  1. Boil the eggs: Place eggs in a single layer in a saucepan. Cover with cold water by about an inch. Add white vinegar. Bring to a rolling boil over high heat, then cover and remove from heat. Let sit for exactly 12 minutes.
  2. Ice bath: While eggs cook, fill a bowl with ice and cold water. Transfer eggs to ice bath using a slotted spoon. Chill for at least 5 minutes.
  3. Peel the eggs: Gently tap each egg on the counter to crack the shell, then roll between palms. Start peeling from the wider end. Rinse to remove shell fragments.
  4. Slice eggs in half: Using a sharp knife, slice each egg lengthwise. Pop yolks into a mixing bowl. Arrange egg white halves on a serving platter.
  5. Make the filling: Add mayonnaise, yellow mustard, pickle juice, salt, pepper, and smoked paprika to the yolks. Mash with a fork until smooth. Adjust seasoning to taste.
  6. Pipe the filling: Spoon filling into a piping bag or zip-top bag. Snip off 1/2 inch from the tip. Pipe filling into each egg white half, mounding slightly.
  7. Make the monster eyeballs: Slice black olives crosswise into rounds (about 4-5 slices per olive). Place one olive slice on top of each filled egg, pressing gently.
  8. Add the ‘bloodshot’ effect: Place a tiny piece of pimento or red bell pepper at the edge of the olive slice.
  9. Finish with paprika: Lightly sprinkle tops with smoked paprika.
  10. Chill before serving: Refrigerate for at least 30 minutes before serving.

Notes
