Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110°F) and brown sugar. Sprinkle yeast on top and let sit for 5-7 minutes until frothy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until a shaggy dough forms. Gradually add remaining cup of flour, mixing until dough pulls away from sides of bowl.
  3. Knead the dough: Turn dough onto a lightly floured surface and knead for 6-8 minutes until smooth and elastic. The dough should spring back when poked.
  4. First rise: Place dough in a lightly greased bowl, cover with a clean towel, and let rise in a warm spot for 45-60 minutes until doubled in size.
  5. Shape the bites: Punch down dough and divide into 4 equal pieces. Roll each into a 1-inch thick rope, then cut into 1-inch bite-sized pieces (about 40-50 total).
  6. The baking soda bath (optional): For classic pretzel crust, bring a large pot of water to a boil, add 1/4 cup baking soda. Drop pretzel bites in batches for 30 seconds, then remove with slotted spoon to parchment-lined baking sheet. For softer version, skip this step.
