  • 6 large eggs, room temperature
  • 2 cups (480 ml) whole milk or half-and-half
  • 1/2 cup (100 g) granulated sugar
  • 2 tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp freshly grated nutmeg (optional)
  • Pinch of salt
  • 3 large ripe peaches, peeled, pitted, and sliced (about 1 lb / 450 g)
  • 3 tbsp unsalted butter
  • 1/4 cup (50 g) brown sugar, packed
  • 1/2 tsp ground cinnamon
  • 1 tsp lemon juice
  • 1/2 cup (60 g) all-purpose flour
  • 1/3 cup (65 g) light brown sugar, packed
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 cup (60 g) unsalted butter, cold and cubed
  • 1/2 cup (60 g) chopped pecans (toasted if possible)

Instructions

  1. Cut brioche or challah into 1-inch cubes and spread evenly in a 9×13 inch baking dish. Set aside.
  2. In a large mixing bowl, whisk together eggs, milk or half-and-half, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt until smooth. Pour evenly over bread cubes, pressing gently to help absorb. Let soak for 10-15 minutes.
  3. Melt butter in a medium skillet over medium heat. Add brown sugar and cinnamon, stirring until melted and bubbly. Add peach slices and lemon juice, cooking 5-7 minutes until peaches are tender and caramelized. Remove from heat.
  4. In a small bowl or food processor, combine flour, brown sugar, salt, and cinnamon. Add cold cubed butter and cut in or pulse until mixture resembles coarse crumbs. Stir in chopped pecans.
  5. Spread caramelized peaches evenly over soaked bread. Sprinkle praline streusel on top.
  6. Preheat oven to 350°F (175°C). Bake casserole for 40-45 minutes until custard is set and streusel is golden and crisp. Tent with foil if streusel browns too fast.
  7. Let casserole rest for 10 minutes before serving.

Notes

Let the bread soak in the custard for 10-15 minutes for best texture; refrigerate overnight for even better results. Use cold butter for streusel to achieve crumbly texture. Caramelize peaches carefully to avoid burning sugar. Rest casserole after baking for easier slicing.
