  • 2 lbs (900g) ground beef (80/20)
  • 1 cup (120g) plain or panko breadcrumbs
  • 1/2 cup (120ml) whole milk
  • 1 large egg
  • 1 medium yellow onion, finely chopped (about 1 cup)
  • 3 cloves garlic, minced
  • 1/3 cup (80ml) ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup (100g) packed brown sugar (light or dark)
  • 1/2 cup (120ml) ketchup (for glaze)
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan.
  2. In a small skillet over medium heat, sauté chopped onion in a drizzle of olive oil for about 5 minutes until soft. Add minced garlic and cook 30 seconds more. Let cool.
  3. In a small saucepan, combine brown sugar, 1/2 cup ketchup, apple cider vinegar, smoked paprika, and garlic powder. Whisk over medium-low heat until simmering. Reduce heat to low and cook 5 minutes until slightly thickened. Set aside.
  4. In a large bowl, combine ground beef, cooled onion and garlic, breadcrumbs, milk, egg, 1/3 cup ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix with your hands until just combined. Do not overmix.
  5. Transfer meat mixture to the loaf pan and press gently into an even loaf.
  6. Bake for 45 minutes. Remove from oven and spoon half the glaze over the top. Return to oven and bake 15 minutes. Add remaining glaze and bake another 10-15 minutes, until internal temperature reaches 160°F (71°C).
  7. Let meatloaf rest in the pan for 10-15 minutes before slicing. Serve with pan juices.

Notes

For a gluten-free option, use gluten-free breadcrumbs or almond flour. If out of Worcestershire sauce, use soy sauce or balsamic vinegar. Let the meatloaf rest before slicing to keep it moist. Glaze in stages to prevent burning.
