  • 56 ripe fresh peaches, peeled and sliced (about 4 cups) or 3 cups peach preserves
  • 1/2 cup packed light brown sugar
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. If using fresh peaches, peel and slice 5-6 medium peaches into thin wedges (about 4 cups). Toss with 1 tablespoon fresh lemon juice and 1/2 cup brown sugar. If using peach preserves, stir preserves with lemon juice and brown sugar.
  3. Transfer the peach mixture to an 8×8-inch baking dish, spreading evenly.
  4. In a medium bowl, combine rolled oats, all-purpose flour, brown sugar, cinnamon, and salt. Cut in cold, cubed butter using a pastry cutter or fork until mixture resembles coarse crumbs with pea-sized bits.
  5. Sprinkle the oat crumble evenly over the peaches.
  6. Bake for 35-40 minutes until topping is golden brown and peach juices bubble around edges. Tent with foil if topping browns too fast.
  7. Let cool for at least 10 minutes before serving to thicken the juices.

Notes

Keep butter cold for a crispy topping. Use rolled oats for best texture. If peaches are very juicy, toss with 1 tablespoon cornstarch before baking to thicken filling. Tent with foil if topping browns too quickly. Can substitute coconut oil and almond flour for dairy-free and gluten-free versions.
