A hearty, comforting breakfast casserole loaded with sausage, eggs, cheese, hash browns, and bread. Perfect for feeding a crowd or enjoying a cozy weekend brunch.

  • 1 lb breakfast sausage
  • 12 large eggs
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese, divided
  • 4 cups frozen hash browns, thawed and squeezed dry
  • 4 cups stale bread, cubed
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried mustard
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Cook sausage in a large skillet over medium-high heat, breaking it up, until browned (5-7 minutes). Transfer to a plate, leaving about 1 tablespoon fat in the pan.
  3. In the same skillet, sauté diced onion over medium heat until softened (3-4 minutes). Add minced garlic and cook 30 seconds. Remove from heat.
  4. Spread cubed bread evenly in the prepared dish. Top with thawed hash browns.
  5. Scatter cooked sausage and onion-garlic mixture over the bread and hash browns.
  6. Sprinkle 1½ cups cheddar cheese over the sausage layer.
  7. In a large bowl, whisk together eggs, milk, salt, pepper, and dried mustard until smooth and frothy.
  8. Pour egg mixture evenly over the casserole. Gently press down with a spatula to help absorption. Let sit 5 minutes.
  9. Top with remaining ½ cup cheddar cheese.
  10. Cover with aluminum foil and bake for 35 minutes.
  11. Remove foil and bake another 15-20 minutes until golden brown and set in the center (internal temperature 160°F).
  12. Let rest 10-15 minutes before slicing. Garnish with parsley if desired.

Notes

For best results, use day-old bread and thaw hash browns completely, squeezing out excess moisture. Let casserole rest before slicing to ensure clean cuts. Can be assembled the night before and refrigerated; add 5-10 minutes to baking time if starting cold.
