  • 4 cloves garlic, minced
  • ½ cup grated Parmesan cheese (50g), preferably freshly grated
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prep the Chicken: If using whole wings, cut through the joints to separate drumettes from flats. Discard wing tips or save for stock. Place pieces in a large bowl and pat incredibly dry with paper towels.
  2. Make the Dry Rub: In a small bowl, combine baking powder, garlic powder, salt, and pepper. Whisk to distribute evenly.
  3. Coat the Wings: Sprinkle dry rub over dried wings. Use hands to toss and massage seasoning into every piece. Let sit for 5-10 minutes at room temperature.
  4. Preheat the Air Fryer: Set air fryer to 400°F (200°C) and preheat for 3 minutes.
  5. Air Fry the Wings: Place wings in air fryer basket in a single layer without overcrowding. Cook at 400°F (200°C) for 10 minutes. Flip wings with tongs and cook for another 10-15 minutes until internal temperature reaches 165°F (74°C) and skin is golden brown and crispy.
  6. Make the Garlic Parmesan Sauce: While wings cook, melt butter in a small saucepan over low heat. Add minced garlic and cook for 1-2 minutes until fragrant. Do not let garlic brown. Remove from heat and stir in grated Parmesan until melted and combined.
  7. Toss and Serve: Transfer hot wings to a large clean bowl. Pour warm garlic parmesan sauce over wings and toss gently with tongs until evenly coated. Sprinkle fresh parsley over top and toss once more.
