Cozy Gluten-Free Herb Thanksgiving Stuffing

A simple, last-minute gluten-free stuffing made with toasted bread cubes, sautéed aromatics, and dried herbs. It’s quick, easy, and a guaranteed crowd-pleaser for Thanksgiving.

  • 1 large loaf gluten-free bread (about 10–12 cups cubed)
  • 1/2 cup unsalted butter (1 stick)
  • 1 large yellow onion, diced
  • 3–4 stalks celery, diced
  • 3 cloves garlic, minced
  • 2 teaspoons dried sage
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, crushed
  • 1/4 cup fresh parsley, chopped
  • 1 1/2 to 2 cups low-sodium vegetable or chicken broth
  • 2 large eggs
  • Salt and black pepper to taste
  • Optional: 1 cup cooked and crumbled sausage or mushrooms

Instructions

  1. Preheat oven to 350°F (175°C). Cut gluten-free bread into 1-inch cubes (10-12 cups). Spread on a large baking sheet and bake for 10-12 minutes, stirring halfway, until dry and lightly golden. Let cool slightly.
  2. While bread toasts, melt butter in a large skillet over medium heat. Add diced onion and celery; cook 6-8 minutes until soft and translucent. Add minced garlic and cook 1 minute until fragrant.
  3. Remove skillet from heat. Stir in dried sage, thyme, and crushed rosemary. Let herbs bloom in residual heat for about 1 minute.
  4. In a large mixing bowl, whisk together eggs and 1 1/2 cups broth. Season with salt and pepper. Add toasted bread cubes and sautéed vegetable-herb mixture. Toss gently until evenly coated. If dry, add remaining 1/2 cup broth. Let sit 5 minutes for absorption.
  5. Transfer stuffing to a greased 9×13-inch baking dish. Spread evenly. Cover with foil and bake 25 minutes.
  6. Remove foil and bake 15-20 minutes more until top is golden brown and crispy. For extra crispiness, broil 2-3 minutes, watching closely.
  7. Let rest 5 minutes before serving. Sprinkle with fresh parsley.

Notes

Toast bread cubes to prevent sogginess. Season generously as gluten-free bread can be bland. Use low-sodium broth for salt control. Let stuffing rest after baking for easier serving. Can be assembled a day ahead and baked just before serving.
