  • 1 cup candy corn (Brach’s recommended)
  • ½ cup mellowcreme pumpkins
  • ½ cup orange jelly beans (Jelly Belly recommended)
  • 1 cup pretzel sticks (Snyder’s of Hanover recommended)
  • ½ cup salted peanuts or almonds
  • ¼ cup pumpkin seeds (optional)
  • 8 oz brie cheese (1 wheel)
  • 4 oz goat cheese log (Vermont Creamery recommended)
  • 4 oz dark chocolate squares (70% cocoa or higher, Ghirardelli recommended)
  • ½ cup dried apricots (unsulfured preferred)
  • 1 apple, sliced (tossed in lemon juice to prevent browning)
  • ¼ cup pomegranate seeds
  • 1 cup assorted crackers (Carr’s Table Water Crackers recommended)
  • ½ cup mini marshmallows
  • ¼ cup caramel dip (store-bought, warmed)

Instructions

  1. Choose your board and position your bowls. Place small bowls or ramekins on the board first—caramel dip in the center, pomegranate seeds and mini marshmallows off to one side.
  2. Place the cheeses. Set the brie wheel and goat cheese log on opposite ends of the board, leaving space around them for cutting.
  3. Add the dark chocolate squares. Break into irregular pieces and arrange near the brie in a loose cluster.
  4. Fill in with the salty stuff. Scatter pretzel sticks, salted peanuts or almonds, and pumpkin seeds around the board, spreading them out evenly.
  5. Add the candy corn and mellowcreme pumpkins. Sprinkle candy corn, mellowcreme pumpkins, and orange jelly beans across the board, creating little ‘pockets’ of candy.
  6. Arrange the fruit. Place dried apricots near the goat cheese, fan out apple slices in a semi-circle on one edge, and sprinkle pomegranate seeds over the goat cheese and around the board.
  7. Fill the bowls. Spoon caramel dip into its bowl, add mini marshmallows and pomegranate seeds to their bowls, and place crackers in a small stack near the brie.
  8. Final touches. Step back and fill any gaps with extra pretzels or candy corn. Add a few whole almonds for height variation.

Notes

Let brie come to room temperature for 20 minutes before serving for best texture. Use a damp paper towel under bowls to prevent sliding if serving outdoors. Prep ingredients a few hours ahead but assemble no more than 30 minutes before serving. Apple slices can be tossed in lemon juice to prevent browning.
