  • 8 lasagna noodles, broken into 2-inch pieces
  • 1 cup whole-milk ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh lemon zest
  • Pinch of salt
  • Fresh basil leaves, torn (for garnish)
  • Extra grated Parmesan cheese (for serving)

Instructions

  1. Brown the sausage: Heat olive oil in a Dutch oven over medium-high heat. Add Italian sausage, breaking it up as it cooks. Cook until browned and cooked through, about 5-7 minutes. Leave about a tablespoon of fat in the pot.
  2. Sauté the aromatics: Add diced onion to the pot and cook for 2-3 minutes until translucent. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add the seasonings: Sprinkle in dried oregano, dried basil, red pepper flakes (if using), and a generous pinch of salt and black pepper. Stir and let toast for 30 seconds.
  4. Build the broth: Pour in crushed tomatoes and chicken broth, stirring to scrape up browned bits from the bottom. Bring to a boil, then reduce heat to a simmer.
  5. Cook the noodles: Add broken lasagna noodles to the simmering broth. Stir gently to submerge. Cook according to package directions, about 10-12 minutes, stirring occasionally, until tender but still al dente.
  6. Make the ricotta dollops: In a small bowl, combine whole-milk ricotta, grated Parmesan, chopped parsley, lemon zest, and a pinch of salt. Stir until smooth and creamy. Set aside at room temperature.
  7. Finish and serve: Once noodles are tender, remove pot from heat. Taste and adjust seasoning. Ladle soup into bowls, top each with a generous dollop of ricotta mixture. Garnish with torn fresh basil and extra Parmesan. Serve immediately with crusty bread.

Notes
