This cozy maple cinnamon roasted pumpkin seeds recipe is a tribute to a lost café in Portland, Oregon. It’s a quick and easy snack that combines sweet maple syrup, warm cinnamon, and the earthy crunch of pumpkin seeds for pure comfort food magic.

Ingredients

Scale
  • 1 ½ cups fresh pumpkin seeds, rinsed and thoroughly dried
  • 3 tablespoons pure maple syrup (Grade A Dark Amber preferred)
  • 2 tablespoons unsalted butter, melted
  • 1 ½ teaspoons ground cinnamon (Saigon or Ceylon recommended)
  • ½ teaspoon flaky sea salt (like Maldon)
  • ½ teaspoon vanilla extract (optional)
  • ¼ teaspoon ground nutmeg (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. After carving your pumpkin, separate the seeds from the stringy pulp. Place them in a colander and rinse under cool water to remove large chunks of pulp.
  3. Spread the rinsed seeds on a clean kitchen towel. Pat them dry with another towel or paper towels. Let them sit for about 10 minutes to air dry thoroughly.
  4. In a large mixing bowl, whisk together the melted butter, maple syrup, cinnamon, salt, vanilla extract, and nutmeg (if using).
  5. Add the dried pumpkin seeds to the bowl. Use a rubber spatula to toss them until every seed is evenly coated.
  6. Pour the coated seeds onto the prepared baking sheet and spread them into a single, even layer, leaving a little space between them.
  7. Roast for 10 minutes. Remove the sheet from the oven, stir the seeds, and rotate the pan front to back.
  8. Return the sheet to the oven and roast for another 8-12 minutes, until the seeds are deep golden brown and fragrant. Watch closely during the last few minutes to prevent burning.
  9. Let the seeds cool completely on the baking sheet for at least 20-30 minutes. They will continue to crisp up as they cool.

Notes

Dry the seeds thoroughly to ensure crispiness. Watch the oven closely during the last few minutes to prevent burning. Let the seeds cool completely before eating for the best crunch. For a vegan version, substitute melted coconut oil or vegan butter for the butter.
