A rich and comforting hot chocolate with a subtle kick of chipotle chile and warm cinnamon, perfect for cozy nights. This easy recipe comes together in under 10 minutes with simple pantry ingredients.

Ingredients

Scale
  • 2 cups whole milk (or oat milk for dairy-free)
  • 3 ounces semi-sweet chocolate, finely chopped
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ground cinnamon (preferably Ceylon)
  • 1/4 teaspoon chipotle chile powder
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • Whipped cream (for garnish, optional)
  • Cinnamon sticks (for garnish, optional)
  • Chocolate shavings (for garnish, optional)

Instructions

  1. Finely chop 3 ounces of semi-sweet chocolate. Set aside.
  2. Pour 2 cups of whole milk into a small saucepan. Heat over medium-low heat until warm, with small bubbles forming around the edges (about 3-4 minutes). Do not boil.
  3. Whisk in 1 tablespoon brown sugar, 1/2 teaspoon ground cinnamon, 1/4 teaspoon chipotle chile powder, and a pinch of salt until dissolved.
  4. Add the chopped chocolate to the warm milk. Whisk continuously until completely melted and smooth (about 1-2 minutes).
  5. Remove from heat. Stir in 1/4 teaspoon vanilla extract.
  6. Taste and adjust sweetness or heat as desired.
  7. For a frothy texture, vigorously whisk the hot chocolate for about 30 seconds, or use a handheld milk frother.
  8. Pour into two mugs. Garnish with whipped cream, a cinnamon stick, chocolate shavings, and a dusting of cinnamon if desired.

Notes

For a dairy-free version, use full-fat oat milk or canned coconut milk. If using dark chocolate (70% or higher), add an extra teaspoon of brown sugar. For kids, reduce or omit the chipotle chile powder. Leftovers can be stored in the refrigerator for up to 3 days and reheated gently.
