  • 1 can (16.3 oz / 463g) refrigerated buttermilk biscuits (flaky, layered kind)
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg (optional)
  • ½ cup (113g / 1 stick) unsalted butter, cut into pieces
  • 1 cup (200g) packed light brown sugar
  • ½ cup (120ml) heavy cream
  • 1 teaspoon vanilla extract
  • ½ teaspoon flaky sea salt (like Maldon), plus more for sprinkling

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Peel, core, and cut apples into 8 wedges each. In a small bowl, toss apple wedges with granulated sugar, cinnamon, and nutmeg (if using). Set aside.
  3. In a small saucepan over medium heat, melt the butter. Add brown sugar and whisk until combined. Let it bubble gently for about 2 minutes, stirring occasionally.
  4. Slowly pour in heavy cream while whisking constantly. Continue to whisk until smooth and sugar is dissolved, about 1-2 minutes. Remove from heat and stir in vanilla extract and flaky sea salt.
  5. Open the can of biscuits. Separate and place on a clean work surface. Gently press or roll each biscuit into a 4-inch circle.
  6. Place 2 apple wedges in the center of each biscuit circle. Bring edges of biscuit up and over apples, pinching seams to seal completely. Place each dumpling seam-side down in the prepared baking dish.
  7. Pour warm salted caramel sauce evenly over the dumplings.
  8. Bake for 30-35 minutes, or until biscuits are golden brown and cooked through, and caramel sauce is bubbly and thick. If browning too quickly, tent with foil for the last 10 minutes.
  9. Let dumplings cool in the dish for 5-10 minutes before serving.

Notes

For best results, use Granny Smith apples for tartness and firmness. Seal biscuit seams well to prevent sogginess. Let dumplings rest after baking for caramel to thicken. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in oven at 350°F for 10-15 minutes.
