Cozy Sausage Stuffed Acorn Squash with Maple Glaze

A hearty and comforting main dish featuring caramelized acorn squash stuffed with savory sausage and herbs, all tied together with a sweet maple glaze. Perfect for fall and winter evenings.

Ingredients

  • 2 acorn squash, halved and seeded
  • 1 lb (450 g) ground sausage
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup (60 ml) maple syrup
  • 2 tablespoons (30 g) butter, melted
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place acorn squash halves cut-side down on the baking sheet. Roast for 25-30 minutes until tender.
  3. While squash roasts, cook sausage in a skillet over medium heat, breaking it up, until browned. Remove and set aside.
  4. In the same skillet, sauté onion and garlic until softened, about 3-4 minutes.
  5. Return sausage to the skillet. Stir in sage, thyme, salt, and pepper. Cook for 1 minute.
  6. In a small bowl, whisk together maple syrup and melted butter.
  7. When squash is done, flip halves cut-side up. Brush the inside with half the maple-butter mixture.
  8. Fill each squash half with the sausage mixture. Drizzle remaining maple-butter over the filling.
  9. Return to oven and bake for 10-15 minutes until heated through and glaze is bubbly.
  10. Garnish with fresh parsley if desired. Serve warm.

Notes

For a lighter version, use turkey sausage. The maple glaze can be adjusted to taste—add more maple for extra sweetness or a pinch of cayenne for heat.
