A quick and easy creamy buffalo chicken dip that combines shredded chicken, cream cheese, and buffalo sauce for a spicy, tangy, and comforting snack perfect for parties and game nights.

Ingredients

Scale
  • 2 cups shredded cooked chicken (about 10 oz / 280 g), rotisserie chicken recommended
  • 8 oz (225 g) cream cheese, softened
  • ½ cup (120 ml) buffalo hot sauce (e.g., Frank’s RedHot)
  • ½ cup (120 ml) ranch dressing (buttermilk style recommended)
  • 1 cup (100 g) shredded cheddar cheese
  • ¼ cup blue cheese crumbles (optional)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Crispy tortilla chips for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, soften the cream cheese using a hand mixer or sturdy spoon until smooth and creamy, about 2 minutes.
  3. Add the buffalo hot sauce and ranch dressing to the cream cheese and mix well until fully combined.
  4. Stir in the shredded chicken, ensuring it is well-distributed.
  5. Mix in the shredded cheddar cheese, garlic powder, onion powder, and blue cheese crumbles (if using). Season with salt and pepper to taste.
  6. Transfer the mixture to an 8×8-inch (20×20 cm) baking dish and spread evenly.
  7. Bake for 20-25 minutes until the dip is bubbly around the edges and slightly golden on top.
  8. Let the dip cool for 5 minutes before serving.
  9. Serve warm with crispy tortilla chips.

Notes

Softening the cream cheese beforehand is key to avoid lumps. Use rotisserie chicken for convenience and flavor. Bake until bubbly and golden for best results. For extra crisp chips, warm them briefly in the oven before serving. Adjust buffalo sauce quantity to control spice level. Leftovers can be refrigerated for up to 4 days or frozen for up to 2 months.
