  • 1/4 cup crumbled blue cheese (optional)
  • 24 wonton wrappers
  • 2 tablespoons olive oil or avocado oil spray
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Make the wonton chips: Stack wonton wrappers and cut diagonally to create triangles. Place in a single layer on a parchment-lined baking sheet. Lightly brush or spray with olive oil. Sprinkle with garlic powder and salt. Bake for 5-7 minutes until golden brown and crispy. Watch closely to avoid burning.
  3. Prepare the dip base: In a mixing bowl, combine softened cream cheese, sour cream, and ranch dressing. Mix until completely smooth and creamy.
  4. Add the heat and protein: Pour in buffalo wing sauce and mix until fully incorporated. Fold in shredded chicken until evenly distributed.
  5. Add the cheese: Stir in 3/4 cup cheddar cheese and 1/4 cup mozzarella cheese. Reserve remaining cheeses for topping. If using blue cheese, stir it in now.
  6. Bake the dip: Transfer mixture to an 8×8 or 9×9 baking dish and spread evenly. Sprinkle remaining cheddar and mozzarella on top. Bake for 15-20 minutes until hot, bubbly, and cheese is melted and slightly golden.
  7. Rest and serve: Let dip sit for 5 minutes after baking. Serve immediately with crispy wonton chips.

Notes

For best results, use full-fat cream cheese and sour cream to avoid a watery dip. Let the dip rest for 5 minutes after baking to set. Wonton chips can be made a few hours ahead and stored in an airtight container at room temperature. To re-crisp, bake at 300°F for 2-3 minutes.
