This creamy copycat Starbucks pumpkin cream cold foam is the result of all that trial and error. It’s the one I finally got right—the one that makes me feel like I’m treating myself without actually leaving the house or spending half my paycheck.

  • 1/4 cup heavy cream, cold
  • 2 tablespoons whole milk, cold
  • 2 tablespoons pumpkin puree (not pumpkin pie filling)
  • 1 tablespoon maple syrup (or to taste)
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon pumpkin pie spice, plus more for garnish
  • Pinch of fine sea salt
  • 1 cup strong brewed coffee, chilled (or cold brew)

Instructions

  1. Chill your ingredients and equipment: Make sure your heavy cream and milk are really cold. If using a mixing bowl or mason jar, pop it in the freezer for about 5 minutes.
  2. Combine the ingredients: In your mason jar, mixing bowl, or frother cup, add 1/4 cup cold heavy cream, 2 tablespoons cold whole milk, 2 tablespoons pumpkin puree, 1 tablespoon maple syrup, 1/2 teaspoon vanilla extract, 1/4 teaspoon pumpkin pie spice, and a tiny pinch of salt.
  3. Shake or froth until thick: If using a mason jar, screw the lid on tight and shake vigorously for about 60 seconds. If using a frother, blend for about 30 seconds until the mixture has doubled in volume and looks thick and velvety.
  4. Check the consistency: The perfect cold foam should be thick but still pourable. If too thin, shake or froth for another 15-20 seconds. If too thick, add a splash more milk and gently stir.
  5. Prepare your coffee: Fill a glass with ice cubes and pour in about 1 cup of cold brew or chilled strong coffee. Leave about an inch of space at the top for the foam.
  6. Pour the foam over the coffee: Gently pour the pumpkin cream cold foam over the back of a spoon onto your iced coffee to help it float.
  7. Garnish and serve: Sprinkle a tiny pinch of pumpkin pie spice or cinnamon on top. Serve immediately with a straw.

Notes

The foam is best made fresh and used within 5-10 minutes. For dairy-free, use full-fat canned coconut cream and plant-based milk. For extra pumpkin spice flavor, add an extra 1/4 teaspoon pumpkin pie spice. Strain pumpkin puree on a paper towel to remove excess moisture for thicker foam. Make sure coffee is cold before adding foam to prevent melting.
