A luscious, creamy overnight oats recipe combining peanut butter, chocolate chips, and protein powder for a quick, healthy, and indulgent breakfast.

Ingredients

Scale
  • 1/2 cup (45g) old-fashioned rolled oats
  • 2 tablespoons (32g) natural peanut butter
  • 3/4 cup (180ml) milk of choice (dairy or plant-based)
  • 1 scoop (about 30g) vanilla whey protein powder
  • 1/4 cup (60g) Greek yogurt
  • 2 tablespoons (20g) mini chocolate chips
  • 1 teaspoon (5g) chia seeds
  • 1 teaspoon (7g) honey or maple syrup (optional)
  • Pinch of salt

Instructions

  1. Measure the oats and chia seeds: Add 1/2 cup (45g) old-fashioned rolled oats and 1 teaspoon (5g) chia seeds into your mixing bowl or mason jar.
  2. Mix in the peanut butter: Add 2 tablespoons (32g) of natural peanut butter. Stir gently to coat the oats; warming it slightly helps if stiff.
  3. Add protein powder and salt: Spoon in 1 scoop (about 30g) of vanilla whey protein powder and a pinch of salt. Mix to avoid clumps.
  4. Pour in milk and yogurt: Add 3/4 cup (180ml) milk and 1/4 cup (60g) Greek yogurt. Stir until smooth and creamy.
  5. Sweeten the mixture: Add 1 teaspoon (7g) honey or maple syrup if desired. This step is optional.
  6. Fold in chocolate chips: Gently stir in 2 tablespoons (20g) mini chocolate chips, avoiding overmixing.
  7. Cover and refrigerate: Seal the jar/container and refrigerate for at least 6 hours or overnight.
  8. Serve and enjoy: Stir before serving. Add extra milk if too thick. Top with extra chocolate chips, sliced banana, or crushed peanuts if desired.

Notes

Use natural peanut butter for best flavor and texture. Chia seeds help thicken the oats. Avoid overmixing to keep texture intact. Refrigerate at least 6 hours, preferably overnight. Stir halfway through refrigeration for even flavor. Add extra milk before serving if too thick. For vegan version, use plant-based protein powder, non-dairy yogurt, and milk.
