An easy homemade no-churn ice cream combining tangy cream cheese and sweet strawberries for a creamy, refreshing dessert without the need for an ice cream maker.

  • 3/4 cup granulated sugar (150 g)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh strawberries, hulled and sliced (225 g)
  • 1 tablespoon lemon juice
  • 1/2 cup graham cracker crumbs (55 g), optional

Instructions

  1. Prepare the strawberries: Place hulled and sliced strawberries in a blender or food processor. Add lemon juice and 1/4 cup (50 g) of sugar. Pulse until slightly chunky puree forms (about 5 minutes).
  2. Whip the cream cheese and sugar: In a large bowl, beat softened cream cheese with 1/2 cup (100 g) sugar until smooth and fluffy using an electric mixer (about 3 minutes).
  3. Whip the heavy cream: In a separate chilled bowl, whip heavy cream with vanilla extract until stiff peaks form (4–6 minutes).
  4. Combine mixtures: Gently fold whipped cream into the cream cheese mixture in two additions using a rubber spatula, folding slowly to keep airiness (2–3 minutes).
  5. Swirl in the strawberry puree: Add strawberry puree to the creamy mixture and fold lightly until streaks remain, avoiding overmixing.
  6. Add graham cracker crumbs (optional): Fold in graham cracker crumbs for a crunchy texture.
  7. Freeze: Transfer mixture to a freezer-safe container, smooth the top, cover, and freeze for at least 6 hours or overnight until firm.
  8. Serve: Let ice cream sit at room temperature for 5 minutes before scooping.

Notes

If ice cream is too firm after freezing, stir gently after 3 hours to break up ice crystals. Avoid overwhipping cream to prevent grainy texture. Use lemon juice to brighten strawberry flavor. For dairy-free version, substitute heavy cream with coconut cream and use vegan cream cheese. Graham cracker crumbs are optional for added crunch. Let ice cream soften 5 minutes before serving for easier scooping.
