  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 1/3 cup chopped sun-dried tomatoes (oil-packed or rehydrated dry-packed)
  • 4 cups fresh baby spinach (about 120 g)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (basil, oregano, thyme mix)
  • Salt and pepper to taste
  • 1/2 cup low sodium chicken broth (120 ml)

Instructions

  1. Pat the chicken breasts dry and season both sides with salt, pepper, and dried Italian herbs. (Approx. 5 minutes)
  2. Heat a large skillet over medium-high heat and add 2 tablespoons olive oil. Warm until shimmering but not smoking. (Approx. 2 minutes)
  3. Add chicken breasts to the hot pan and cook undisturbed for 5-6 minutes until golden brown. Flip and cook another 5 minutes or until internal temperature reaches 165°F (74°C). Remove chicken and set aside. (Total 10-12 minutes)
  4. Lower heat to medium and add minced garlic to the pan. Stir for about 30 seconds until fragrant. Add chopped sun-dried tomatoes and cook for 1 minute. (Approx. 2 minutes)
  5. Pour in 1/2 cup chicken broth, scraping browned bits from the pan. Simmer for 2 minutes to reduce slightly. Add 1 cup heavy cream and stir to combine. (Approx. 3 minutes)
  6. Slowly stir in grated Parmesan cheese until melted and sauce thickens slightly. Add more broth or cream if sauce becomes too thick. (Approx. 2 minutes)
  7. Add fresh spinach and stir until just wilted. Return chicken breasts to the pan, spoon sauce over them, and simmer for 2-3 minutes to marry flavors. (Approx. 4 minutes)
  8. Taste the sauce and adjust seasoning with salt and pepper as needed. Serve immediately.

Notes

Avoid overcrowding the pan to ensure proper searing. Keep heat moderate when adding cream to prevent curdling. Add spinach at the end to preserve color and nutrients. Use a thermometer to check chicken doneness. For dairy-free, substitute heavy cream with coconut milk and Parmesan with nutritional yeast or dairy-free alternative.
