This creamy one-pot cheeseburger potato soup is everything you love about a cheeseburger—savory beef, melted cheese, and a slight pickle-y brightness—transformed into a warm, cozy bowl that comes together in about 30 minutes. No fuss, no fancy techniques, just honest, delicious comfort food.

Ingredients

Scale
  • 1 lb (450g) ground beef (80/20 works best for flavor, but lean works too)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups (950ml) low-sodium beef broth
  • 2 cups (475ml) whole milk (use 2% if needed, but whole milk gives the creamiest result)
  • 4 medium Yukon Gold potatoes, peeled and cubed (about 2 lbs or 900g)
  • 2 tbsp (16g) all-purpose flour (or gluten-free flour blend)
  • 2 tbsp (28g) unsalted butter
  • 1 tsp smoked paprika (optional but recommended)
  • Salt and black pepper to taste
  • 2 cups (200g) sharp cheddar cheese, shredded (freshly shredded melts better than pre-shredded)
  • 1/2 cup (120ml) dill pickle juice
  • 1 tbsp yellow mustard
  • 1 tbsp ketchup
  • 1 tsp Worcestershire sauce
  • Crumbled cooked bacon (for topping, optional)
  • Diced dill pickles (for topping, optional)
  • Extra shredded cheddar cheese (for topping, optional)
  • Chopped green onions (for topping, optional)
  • Diced tomatoes (for topping, optional)

Instructions

  1. Brown the beef (5 minutes): Heat your Dutch oven over medium-high heat. Add the ground beef and cook, breaking it apart with your spoon, until browned and cooked through—about 5-6 minutes. Don’t drain all the fat; leave about 1 tablespoon in the pot for flavor. If you’re using lean beef, add a splash of olive oil to compensate.
  2. Sauté the aromatics (3 minutes): Add the diced onion to the pot with the beef. Cook for 2 minutes, stirring occasionally, until the onion softens and becomes translucent. Add the minced garlic and cook for 30 seconds more—just until fragrant. Don’t let the garlic burn.
  3. Build the base (2 minutes): Sprinkle the flour over the beef and onion mixture. Stir constantly for about 1 minute—this cooks out the raw flour taste and helps thicken the soup later. Add the butter and let it melt, stirring to combine everything into a thick paste.
  4. Add the liquids (5 minutes): Slowly pour in the beef broth while stirring continuously to prevent lumps. Add the milk, smoked paprika, salt, and pepper. Bring the mixture to a gentle simmer—you should see small bubbles around the edges, not a rolling boil.
  5. Cook the potatoes (15 minutes): Add the cubed potatoes to the pot. Stir everything together, then reduce the heat to medium-low. Cover the pot and let it simmer for 12-15 minutes, or until the potatoes are tender when pierced with a fork. Stir occasionally to prevent sticking.
  6. Add the cheeseburger flavors (3 minutes): Once the potatoes are tender, reduce the heat to low. Stir in the shredded cheddar cheese, a handful at a time, until completely melted. Add the pickle juice, yellow mustard, ketchup, and Worcestershire sauce. Stir well to combine. Taste and adjust seasoning.
  7. Optional: Create extra creaminess (2 minutes): If you want a thicker, creamier texture, use a potato masher to gently mash about 1 cup of the potatoes right in the pot. Or use an immersion blender for just a few seconds—you want some chunks remaining for texture.
  8. Serve and top (2 minutes): Ladle the soup into bowls. Top with crumbled bacon, diced pickles, extra cheese, green onions, or diced tomatoes. Serve immediately while hot.

Notes

Don’t boil the milk to prevent curdling. Shred your own cheese for smooth melting. Cube potatoes evenly for uniform cooking. Let the soup rest for 5 minutes before serving to allow flavors to meld. Taste as you go and adjust seasoning. The soup thickens as it cools; add a splash of milk or broth when reheating.
