  • 1/4 cup fresh basil leaves, chopped, plus more for garnish
  • Pinch of red pepper flakes (optional)

Instructions

  1. Sauté the aromatics (5 minutes): Place your pot over medium heat and add the butter. Once melted and bubbling, add the diced onion. Cook for 3-4 minutes, stirring occasionally, until soft and translucent. Add the minced garlic and cook for another 30 seconds until fragrant. Do not let the garlic brown.
  2. Add the tomatoes and broth (2 minutes): Pour in both cans of crushed tomatoes and the vegetable broth. Stir everything together, scraping up any browned bits from the bottom of the pot.
  3. Season and simmer (15 minutes): Add the salt, pepper, sugar (if using), and red pepper flakes. Bring the soup to a gentle boil, then reduce the heat to low and let it simmer for 15 minutes, allowing the flavors to meld.
  4. Blend until smooth (2 minutes): Remove the pot from the heat. Using an immersion blender, blend the soup until smooth. If using a regular blender, let the soup cool for 5 minutes first, then blend in batches, filling the blender no more than halfway and holding the lid down with a towel.
