  • 12 oz Italian sausage, casings removed (spicy or mild)
  • 9 oz cheese tortellini, fresh or refrigerated
  • 1 tbsp olive oil, extra virgin preferred
  • 3 cloves garlic, minced
  • 1 small yellow onion, finely chopped
  • 14 oz can crushed tomatoes, no salt added
  • 2 tbsp tomato paste
  • 2 cups low sodium chicken broth
  • 1 cup heavy cream
  • 1/4 cup fresh basil, chopped
  • 1/2 cup grated Parmesan cheese, plus extra for serving
  • Salt and black pepper, to taste
  • Red pepper flakes, optional pinch

Instructions

  1. Heat 1 tbsp olive oil in a large deep skillet over medium heat. Add Italian sausage, breaking it apart with a spoon. Cook 6-8 minutes until browned and cooked through. Remove sausage with a slotted spoon and set aside, leaving rendered fat in the pan.
  2. In the same pan, add chopped onion and cook 3-4 minutes until translucent and soft. Add minced garlic and cook 30 seconds until fragrant but not browned.
  3. Stir in 2 tbsp tomato paste and cook 1 minute to deepen flavor. Add crushed tomatoes and chicken broth, stir well and bring to a gentle simmer.
  4. Add cheese tortellini directly into simmering sauce. Stir gently to prevent sticking. Cover with lid and cook 5-7 minutes, stirring once halfway, until tortellini are tender but not mushy. Add splash of broth or water if sauce thickens too much.
  5. Lower heat and stir in heavy cream, cooked sausage, and half of the chopped basil. Simmer uncovered 2-3 minutes to blend flavors and warm through.
  6. Stir in grated Parmesan cheese and season with salt, pepper, and red pepper flakes if using. Taste and adjust seasoning. Remove from heat and sprinkle remaining fresh basil on top.

Notes

Brown the sausage well for added flavor. Use fresh basil added at the end for brightness. Simmer cream gently on low heat to avoid curdling. Do not overcook tortellini to prevent mushiness. Stir gently and often to prevent sticking. For gluten-free, substitute tortellini with gluten-free varieties or gnocchi. For dairy-free, substitute heavy cream with coconut cream.
