  • 16 oz cream cheese, softened (two 8-oz blocks)
  • 1 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 1 packet (1 oz) ranch dressing mix
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup blue cheese crumbles (optional)
  • 1/4 cup sliced green onions (for garnish)
  • Celery sticks, carrot sticks, tortilla chips or crackers (for serving)

Instructions

  1. Prep your chicken: If using rotisserie chicken, remove skin and bones, then shred with two forks to get about 3 cups. If using raw chicken breasts, cook in slow cooker on low for 4-5 hours with a little water, then shred.
  2. Soften the cream cheese: Take both blocks out of the fridge about 30 minutes before starting. If forgotten, microwave on low power in 20-second intervals until soft but not hot.
  3. Blend the base: In a mixing bowl, combine softened cream cheese and buffalo hot sauce. Use a hand mixer on low speed until completely smooth and uniform in color.
  4. Layer in the slow cooker: Spray the inside of a 2-4 quart slow cooker with non-stick spray. Add shredded chicken in an even layer. Pour cream cheese mixture over the top. Sprinkle ranch dressing mix evenly over everything.
  5. Add the cheeses: Sprinkle shredded cheddar and Monterey Jack over the top. Do not stir yet.
  6. Cook low and slow: Cover and cook on LOW for 2 hours. After 1 hour, stir well to incorporate everything.
  7. Check the consistency: After 2 hours, the dip should be hot, bubbly, and smooth. If too thick, stir in 2 tablespoons milk or chicken broth. If too thin, leave lid off for 15-20 minutes.
  8. Add finishing touches: If using blue cheese crumbles, stir them in gently right before serving. Top with sliced green onions.
  9. Serve warm: Transfer to a serving bowl or keep in slow cooker on WARM setting. Serve with celery sticks, carrot sticks, and tortilla chips.

Notes

For best texture, shred your own cheese from a block. Let cream cheese come to room temperature for smooth blending. Adjust heat level by using more or less hot sauce. Dip can be made ahead and refrigerated overnight; add 30 minutes to cook time if starting from cold.
