  • 1 can (15 oz) corn kernels, drained
  • 4 cups low-sodium chicken broth
  • 4 oz cream cheese, softened
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • ½ tsp dried oregano
  • Salt and black pepper to taste
  • Tortilla strips or chips for serving
  • Fresh cilantro, chopped for garnish
  • Lime wedges for serving
  • Shredded cheddar or Monterey Jack cheese (optional)
  • Sour cream or Greek yogurt (optional)

Instructions

  1. Dice the onion and mince the garlic. Rinse and drain the black beans and corn if using canned. Cut chicken into large chunks or leave whole if you prefer shredding after cooking.
  2. Place chicken, onion, garlic, diced tomatoes with chilies, black beans, corn, and chicken broth in the slow cooker. Add cumin, smoked paprika, chili powder, oregano, salt, and pepper. Stir gently to combine all ingredients.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours until chicken is tender and flavors meld.
  4. About 15 minutes before serving, soften the cream cheese in a small bowl if not already softened, then add it to the soup. Stir gently until melted and fully incorporated. Optionally, use an immersion blender on part of the soup for a thicker texture.
  5. Remove the chicken pieces, shred with two forks, and return to the soup. Stir to combine.
  6. Taste the soup and adjust salt or spices if needed. Add more chili powder if you like extra heat.
  7. Ladle into bowls, garnish with tortilla strips, fresh cilantro, shredded cheese, and a squeeze of lime. Add a dollop of sour cream or Greek yogurt if desired.

Notes

Soften cream cheese at room temperature before adding to avoid clumps. Toast cumin and smoked paprika briefly in a dry skillet before adding for enhanced flavor. Keep an eye on slow cooker temperature to avoid overcooking chicken. Add broth or water if soup becomes too thick. For a thicker texture, partially puree the soup with an immersion blender.
