  • 2 pounds boneless, skinless chicken breasts or thighs
  • 3 cans (15 oz each) great northern beans or cannellini beans, drained and rinsed (reserve 1/2 cup for blending)
  • 2 cans (4 oz each) diced green chiles (mild or medium heat)
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low sodium chicken broth
  • 1 tablespoon ground cumin
  • 2 teaspoons dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 cup sour cream
  • 4 oz cream cheese, softened
  • Salt and pepper to taste
  • Fresh cilantro, chopped for garnish (optional)

Instructions

  1. Chop the onion finely and mince the garlic. Drain and rinse the beans thoroughly, setting aside about 1/2 cup to blend later. Trim any excess fat from chicken if desired.
  2. Place the chicken at the bottom of the slow cooker. Add chopped onion, minced garlic, drained beans, diced green chiles, cumin, oregano, cayenne pepper, salt, and pepper. Pour in chicken broth to cover ingredients.
  3. Cover and cook on low for 4-6 hours or on high for 3-4 hours until chicken reaches 165°F and is tender enough to shred.
  4. Remove chicken and shred with two forks. Return shredded chicken to the slow cooker.
  5. Puree the reserved beans with a few spoonfuls of chili broth using a blender or immersion blender until smooth. Stir the creamy bean mixture back into the slow cooker.
  6. Stir in softened cream cheese and sour cream until fully combined and creamy. Adjust salt and pepper to taste.
  7. Simmer uncovered for 10-15 minutes to thicken and blend flavors.
  8. Serve hot, garnished with chopped fresh cilantro and optional lime juice or shredded cheese.

Notes

Reserve some beans to blend for creaminess. Shred chicken after cooking for tenderness. Use softened cream cheese to avoid lumps. Adjust cayenne pepper carefully for heat. If chili is too thin, thicken with cornstarch slurry; if too thick, add broth. Can be adapted for dairy-free or vegetarian versions.
