  • 1 cup all-purpose flour
  • 1 cup water (or unsweetened almond milk for dairy-free option)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika

  • ½ teaspoon black pepper
  • ½ cup hot sauce (Frank’s RedHot recommended)
  • 2 tablespoons unsalted butter, melted (or vegan butter for dairy-free)
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon Worcestershire sauce (optional)
  • ½ cup sour cream
  • ½ cup mayonnaise
  • ½ cup crumbled blue cheese
  • 1 tablespoon lemon juice
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Wash and cut the cauliflower head into bite-sized florets, about 1 to 1½ inches each. Pat them dry with a towel to help the batter stick better.
  2. In a mixing bowl, whisk together 1 cup all-purpose flour, 1 cup water, garlic powder, smoked paprika, salt, and pepper until smooth and slightly thick but still pourable. Add water if needed to reach the right consistency.
  3. Dip each cauliflower floret into the batter, ensuring it is fully coated. Use tongs or a fork to lift and let excess drip off. Place the battered pieces on a parchment-lined tray or plate.
  4. Preheat the air fryer to 400°F (200°C). Arrange the coated florets in a single layer in the basket, leaving space between them for air circulation.
  5. Cook for 15 minutes, shaking the basket halfway through to ensure even crisping. The batter should turn golden and crispy.
  6. While the cauliflower cooks, whisk together hot sauce, melted butter, honey, and Worcestershire sauce in a small bowl until smooth.
  7. Once the florets are crispy, transfer them to a large bowl and pour over the buffalo sauce. Toss gently to coat each piece evenly.
  8. Return the sauce-coated florets to the air fryer basket for an additional 3–5 minutes at 400°F (200°C) to set the sauce and add extra crispness. Watch closely to avoid burning.
  9. While the cauliflower finishes, combine sour cream, mayonnaise, crumbled blue cheese, lemon juice, garlic powder, salt, and pepper in a small bowl. Stir until well blended. Chill until ready to serve.
  10. Plate the buffalo cauliflower bites with a bowl of blue cheese dip on the side. Garnish with chopped fresh parsley or chives if desired.

Notes

Pat cauliflower dry thoroughly to avoid soggy batter. Do not overcrowd the air fryer basket to ensure crispiness. Shake basket halfway through cooking. If bites are not crispy enough after 15 minutes, add a couple more minutes before tossing in sauce. For reheating, use the air fryer at 375°F for 3-5 minutes to maintain crispiness. Blue cheese dip can be thinned with milk or buttermilk if too thick. Variations include gluten-free flour, dairy-free butter and dips, and baking as an alternative cooking method.
