  • 1 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1/2 teaspoon garlic powder
  • 1/3 cup (about 110g) honey
  • 3 tablespoons low-sodium soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha (optional)
  • 1/2 teaspoon sesame oil (optional)
  • 1 tablespoon sesame seeds, toasted (for garnish, optional)
  • 2 green onions, sliced thin (for garnish, optional)

Instructions

  1. If using fresh wings, pat them dry with paper towels. If frozen, let them thaw slightly to separate. Place wings in a large bowl and add baking powder, salt, black pepper, and garlic powder. Toss to coat evenly. Let sit for 5 minutes while preheating the air fryer.
  2. Preheat air fryer to 380°F (193°C) for 3-5 minutes.
  3. Place wings in the air fryer basket in a single layer without overcrowding. Cook at 380°F for 12 minutes. Flip each wing using tongs and cook for another 10-12 minutes, until golden brown and crispy. For frozen wings, add about 5 minutes to total cooking time.
  4. While wings cook, make the sauce: In a small saucepan, combine honey, soy sauce, minced garlic, rice vinegar, sriracha (if using), and sesame oil (if using). Whisk over medium heat until it comes to a gentle simmer. Reduce heat to low and cook for 3-4 minutes, stirring occasionally, until slightly thickened.
  5. Transfer cooked wings to a large bowl. Pour warm honey garlic sauce over the top and toss with tongs until each wing is well coated.
  6. Transfer to a serving platter. Sprinkle with toasted sesame seeds and sliced green onions if desired. Serve immediately while hot and crispy.

Don’t skip the baking powder—it’s key for crispy skin. Make sure it’s baking powder, not baking soda. For extra crispy wings, add 2-3 more minutes to cooking time. Let wings cool for 1-2 minutes before tossing in sauce to help it stick better. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in air fryer at 350°F for 3-4 minutes.
