These crispy bacon-wrapped jalapeño poppers are a quick and easy snack combining smoky bacon, spicy jalapeños, and creamy cheese filling for a crowd-pleasing treat.

  • 12 medium to large fresh jalapeños, firm and bright green
  • 6 slices thin-cut bacon (cut in half if needed)
  • 8 oz (225 g) full-fat cream cheese, softened to room temperature
  • 1 cup (100 g) shredded cheddar cheese (sharp or mild)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder (optional)
  • Salt to taste
  • Black pepper to taste
  • Optional: chopped fresh cilantro or green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup. If using, place a wire rack on top.
  2. Wearing gloves, slice each jalapeño in half lengthwise. Use a small spoon to scoop out the seeds and membranes. Leave some seeds in if you prefer more heat.
  3. In a mixing bowl, combine softened cream cheese, shredded cheddar cheese, garlic powder, onion powder (if using), salt, and pepper. Mix until smooth and creamy.
  4. Fill each jalapeño half generously with the cheese mixture using a spoon or piping bag. Avoid overfilling to prevent spilling during baking.
  5. Wrap each stuffed jalapeño half with a piece of bacon, securing with a toothpick if necessary.
  6. Place the bacon-wrapped jalapeños on the wire rack or directly on the lined baking sheet, spaced evenly for air circulation.
  7. Bake for 20-25 minutes, or until the bacon is crispy and golden. Rotate the baking sheet halfway through for even cooking.
  8. Let the poppers cool for 5 minutes before serving to allow the cheese to set slightly and prevent burns.

Notes

Use gloves when handling jalapeños to avoid skin irritation. Thin-cut bacon crisps better and faster than thick-cut. Using a wire rack helps bacon crisp evenly. Rotate the baking sheet halfway through baking. Avoid overfilling jalapeños to prevent cheese overflow. For extra crispiness, broil for 1-2 minutes at the end but watch closely to avoid burning.
