  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup hot sauce (preferably Frank’s RedHot)
  • 2 tablespoons melted butter (or vegan butter)
  • 1 tablespoon honey or maple syrup (optional)
  • Ranch or blue cheese dressing for dipping (optional)
  • Fresh celery sticks and carrot sticks (optional)
  • Chopped fresh chives or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper or a silicone mat. If you have a cooling rack, place it on the baking sheet for extra airflow.
  2. Wash the cauliflower and cut it into bite-sized florets. Pat them dry with a clean kitchen towel.
  3. In a large bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Slowly pour in the milk while whisking until you have a smooth, slightly thick batter (about the consistency of pancake batter).
  4. Toss the florets into the batter, ensuring each piece is fully coated. Let any excess drip off before placing them on the prepared baking sheet, leaving space between each floret.
  5. Bake for 20 minutes. At the 10-minute mark, flip each piece gently using tongs.
  6. While the cauliflower bakes, whisk together the hot sauce, melted butter, and honey (if using) in a small bowl. Set aside.
  7. After 20 minutes, remove the cauliflower from the oven. Using a pastry brush, generously coat each floret with the buffalo sauce. Return them to the oven for another 10-12 minutes.
  8. Check for doneness: the cauliflower should be tender when pierced with a fork, and the coating should be golden brown and crispy. If desired, broil on low for 1-2 minutes, watching closely.
  9. Serve immediately, sprinkled with fresh chives, with ranch or blue cheese dressing and crunchy veggie sticks.

Notes

Dry the cauliflower thoroughly to avoid sogginess. Don’t overcrowd the baking sheet; use two sheets if needed. For extra crispiness, use a wire rack over the baking sheet. Let the sauce cool slightly before brushing to prevent the coating from sliding off. Adjust the hot sauce amount to your spice preference.
