These crispy baked buffalo cauliflower bites with ranch are the exact thing I’ve been chasing for years. The magic isn’t just in the heat; it’s in the crunch, with a perfect shatter when you bite into a floret, followed by the cool, herby relief of homemade ranch.

Ingredients

Scale
  • 1 large head of cauliflower, cut into bite-sized florets (about 6 cups)
  • 1 cup all-purpose flour
  • 1/2 cup rice flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups water (or buttermilk for a tangier batter)
  • 1/2 cup hot sauce (Frank’s RedHot recommended)
  • 1/4 cup unsalted butter, melted (or vegan butter or coconut oil for dairy-free)
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup plain Greek yogurt (full-fat preferred)
  • 1/4 cup buttermilk (or regular milk with a squeeze of lemon juice)
  • 1/4 cup mayonnaise (Duke’s recommended)
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper. If you have a wire rack, place it on the baking sheet and give it a light spray of cooking oil.
  2. In a large bowl, whisk together the all-purpose flour, rice flour, garlic powder, onion powder, smoked paprika, salt, and pepper. Slowly pour in the water (or buttermilk) while whisking until you have a smooth, lump-free batter. It should be about the consistency of thin pancake batter. If it’s too thick, add a tablespoon more water.
  3. Add the cauliflower florets to the batter. Use your hands or a spatula to gently toss and coat every floret evenly. Make sure each piece is fully covered. Let them sit for 5 minutes. This helps the batter adhere better.
  4. Using a fork or tongs, lift each floret out of the batter, letting any excess drip off. Place them in a single layer on the prepared baking sheet, leaving a little space between each one. Bake for 20 minutes. The batter will look puffy and set, but not yet brown. This par-bake is crucial for achieving that shatteringly crisp exterior.
  5. While the cauliflower is in its first bake, make the sauce. In a medium bowl, whisk together the hot sauce, melted butter, honey, and Worcestershire sauce until smooth. Set aside.
  6. Remove the baking sheet from the oven. Carefully flip each floret over using a spatula. Return the sheet to the oven and bake for another 10-15 minutes, until the florets are deeply golden brown and feel firm and crispy to the touch.
  7. Immediately transfer the hot, crispy florets to a large bowl. Pour the buffalo sauce over them. Use tongs to gently toss and coat every piece evenly. Don’t drench them — you want a nice, even coating, not a soggy mess.
  8. Return the sauced florets to the baking sheet (you can use a clean sheet of parchment). Bake for an additional 5-7 minutes. This sets the sauce and makes the coating even crispier. Keep a close eye on them so they don’t burn.
  9. While the cauliflower finishes, whisk together all the ranch ingredients in a small bowl. Taste and adjust salt and pepper as needed. Refrigerate until ready to serve.

Notes

For a gluten-free option, swap the all-purpose flour for a 1:1 gluten-free baking blend. If you don’t have rice flour, you can use cornstarch for a similar crispy effect. For a vegan ranch, use dairy-free yogurt and mayo, and buttermilk made with plant milk and lemon juice. Don’t overcrowd the pan; use two baking sheets if needed. Pat the cauliflower dry before battering. Frank’s RedHot is recommended for the sauce.
