A quick and easy grilled pizza recipe featuring smoky BBQ chicken, melty mozzarella, and a perfectly crisp crust, ideal for summer cookouts and casual dinners.

  • 1 pre-made pizza dough or store-bought pizza crust (e.g., Boboli brand)
  • 2 cups shredded rotisserie or grilled chicken breast
  • 1/2 cup tangy BBQ sauce (e.g., Sweet Baby Ray’s)
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 small red onion, thinly sliced
  • A handful of fresh cilantro leaves, chopped (optional)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your grill to medium-high heat, about 450°F (230°C). Clean and oil the grill grates to prevent sticking.
  2. In a mixing bowl, toss the shredded chicken with 1/4 cup of BBQ sauce, salt, and pepper. Set aside.
  3. Lightly brush one side of the pizza crust with olive oil. Place the crust oiled side down on the grill. Grill uncovered for 3-4 minutes until grill marks appear and the dough firms up but is not fully cooked.
  4. Using tongs and a pizza peel or spatula, carefully flip the crust. Quickly brush the grilled side with BBQ sauce, then evenly layer the chicken, scatter red onion slices, and top with shredded mozzarella cheese. Close the grill lid and cook for 5-7 minutes until the cheese melts and bubbles.
  5. Remove the pizza from the grill. Sprinkle chopped cilantro on top if desired. Let rest for a couple of minutes before slicing to allow the cheese to set.

Notes

Keep grill grates clean and oiled to prevent sticking. Flip the crust only once to avoid tearing. Watch cheese closely to prevent burning. Use pre-cooked chicken to keep toppings juicy. For gluten-free crusts, watch grilling time as they brown faster. Use a spray bottle of water to control flare-ups.
