  • 6 bone-in, skin-on chicken thighs (about 2 pounds / 900 grams)
  • 2 medium zucchinis, sliced into half-moons (about 400 grams)
  • 1 large lemon, zested and juiced
  • 3 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and freshly cracked black pepper, to taste
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a sheet pan with parchment paper or lightly grease it.
  2. Pat chicken thighs dry with paper towels. Season both sides generously with salt, pepper, oregano, and thyme. Rub in half the lemon zest and 1 tablespoon olive oil. Set aside.
  3. In a bowl, toss zucchini slices with garlic, remaining 2 tablespoons olive oil, salt, pepper, red pepper flakes (if using), and the rest of the lemon zest until evenly coated.
  4. Arrange chicken thighs skin-side up on one side of the sheet pan, spaced slightly apart. Spread zucchini slices in a single layer on the other side.
  5. Roast for 25 minutes. After 20 minutes, check chicken for crispness and ensure internal temperature reaches 165°F (74°C).
  6. Remove pan briefly, drizzle fresh lemon juice over chicken and zucchini, then return to oven for an additional 5 minutes.
  7. Let chicken rest for 5 minutes before serving to lock in juices.

Notes

Patting the chicken dry is key for crispy skin. If zucchini releases excess water, drain it before roasting to avoid sogginess. Broil for 1-2 minutes at the end if you want extra crispiness, but watch closely to prevent burning. Use a meat thermometer to ensure chicken reaches 165°F (74°C).
