This homemade pumpkin spice latte syrup takes just three minutes to make with simple pantry ingredients. It’s perfect for adding cozy fall flavor to coffee, lattes, iced drinks, and more.

  • 1 cup granulated sugar
  • 1 cup water
  • 2 tablespoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • Optional: 1/4 teaspoon pumpkin puree

Instructions

  1. Combine sugar and water: In a small saucepan, add 1 cup granulated sugar and 1 cup water. Give it a quick stir with a whisk to start dissolving the sugar.
  2. Heat the mixture: Place the saucepan over medium heat. Bring the mixture to a gentle simmer (small bubbles around the edges), about 1-2 minutes. Stir occasionally with the whisk to help the sugar dissolve completely.
  3. Add the pumpkin pie spice: Once the sugar is fully dissolved and the mixture is simmering, add 2 tablespoons of pumpkin pie spice. Whisk vigorously for about 30 seconds until fully incorporated. The liquid will turn a warm amber color.
  4. Remove from heat and add vanilla: Take the saucepan off the heat immediately. Stir in 1 teaspoon of vanilla extract. Give it one final whisk to combine.
  5. Cool and store: Let the syrup cool in the saucepan for about 5-10 minutes. It will thicken slightly as it cools. Once cool enough to handle (but still warm), pour into a glass jar or bottle using a funnel. Let cool completely at room temperature before putting the lid on and storing in the refrigerator.

Notes

The flavor intensifies as the syrup sits overnight. If the syrup boils too long, it may become thicker and caramel-like. Whisk thoroughly to avoid spice clumps. Clean up immediately with hot water to avoid sticky residue.
