Easy 30-Minute Pumpkin French Toast Casserole

A quick and delicious pumpkin french toast casserole that comes together in just 30 minutes. Perfect for busy mornings, lazy weekends, or when you need a comforting breakfast without a lot of effort.

  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 4 large eggs (room temperature)
  • 1 cup whole milk (or 2% or oat milk)
  • 1/3 cup brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 6 cups cubed bread (brioche, challah, French bread, or day-old sourdough)
  • 2 tablespoons melted butter (for topping)
  • 2 tablespoons brown sugar (for topping)
  • 1/2 teaspoon cinnamon (for topping)
  • 1/4 cup chopped pecans or walnuts (optional, for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Cube the bread into 1-inch pieces. If using fresh bread, toast the cubes on a baking sheet for 5 minutes while the oven preheats.
  3. In a large mixing bowl, whisk together the pumpkin puree, eggs, milk, brown sugar, vanilla, pumpkin pie spice, cinnamon, and salt until smooth.
  4. Place the bread cubes in the greased baking dish. Pour the custard evenly over the bread and gently toss to coat. Let it sit for 5 minutes.
  5. In a small bowl, mix the melted butter, brown sugar, cinnamon, and chopped nuts (if using) to make the topping. Sprinkle evenly over the soaked bread.
  6. Bake for 20-25 minutes, until the top is golden brown and the center is set but slightly jiggly. A knife inserted in the center should come out clean.
  7. Let the casserole rest for 5 minutes before serving.

Notes

For best results, use day-old bread or toast fresh bread cubes before adding custard. Let the casserole rest for 5 minutes after baking to allow the custard to set properly. To make ahead, assemble the casserole the night before, cover, and refrigerate. Add 5-10 minutes to the baking time if starting from cold.
