  • 2 medium ripe bananas, mashed
  • 1 cup milk (240ml), whole milk preferred or almond/oat milk as substitute
  • 2 large eggs, room temperature
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • Pinch of salt
  • ½ cup mini chocolate chips (90g), allergy-friendly recommended
  • 1 teaspoon vanilla extract
  • Optional: chopped walnuts or pecans for crunch
  • Optional: 1 tablespoon ground flaxseed for extra nutrition

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or line with paper liners.
  2. Mash the bananas in a medium bowl using a fork or potato masher until mostly smooth with a few small lumps remaining.
  3. Add eggs, milk, honey or maple syrup, and vanilla extract to the mashed bananas. Whisk thoroughly until combined and slightly frothy.
  4. In a separate large bowl, stir together rolled oats, baking powder, cinnamon, and salt.
  5. Pour wet ingredients into dry ingredients and stir gently with a spatula or wooden spoon until just combined. Do not overmix.
  6. Fold in chocolate chips, reserving a few to sprinkle on top if desired.
  7. Divide batter evenly into muffin cups, filling each about ¾ full.
  8. Bake for 23-25 minutes until golden on top and a toothpick inserted comes out mostly clean with a few moist crumbs.
  9. Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Do not skip baking powder for light texture. Use room temperature eggs for better mixing. Avoid overmixing to prevent dense cups. Tent with foil if tops brown too fast. Prepare batter night before to save time. Substitute gluten-free oats and dairy-free milk for dietary needs.
