Sweet mini peppers are stuffed with a creamy, spicy buffalo chicken dip and baked until bubbly. This healthier twist on a classic game day appetizer is quick, easy, and absolutely irresistible.

  • 8 oz cream cheese, softened
  • 1 cup cooked, shredded chicken (rotisserie recommended)
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 1/2 cup shredded mozzarella cheese (for topping)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
  2. Wash and dry the mini peppers. Slice each pepper in half lengthwise and remove the seeds and white membrane. You should have about 40-48 pepper halves.
  3. In a medium mixing bowl, combine the softened cream cheese, shredded chicken, buffalo wing sauce, shredded cheddar, and crumbled blue cheese (if using). Mix until well combined and creamy.
  4. Spoon or pipe the filling into each pepper half, creating a nice mound without overfilling.
  5. Sprinkle the shredded mozzarella cheese evenly over the filled peppers.
  6. Bake for 15-18 minutes, until the peppers are tender but still hold their shape and the cheese is melted and bubbly.
  7. Let cool on the baking sheet for 2 minutes, then transfer to a serving platter and garnish with sliced green onions. Serve warm.

Notes

The filling can be made a day ahead and stored in the fridge. Let it come to room temperature for 15 minutes before filling peppers. For easier filling, use a piping bag or a zip-top bag with a corner snipped off. If using pre-shredded cheese, shred your own cheddar for smoother melting. Taste your buffalo sauce first to adjust heat level.
