Easy Cranberry Brie Bites with Puff Pastry

These quick and easy cranberry brie bites are made with puff pastry, brie cheese, and cranberry sauce. Ready in under 20 minutes, they’re the perfect appetizer for holiday parties, game day, or a cozy night in.

Ingredients

  • 1 sheet frozen puff pastry, thawed but still cold
  • 4 oz (115 g) brie cheese, rind on, cut into 16 small cubes (about 1/2-inch each)
  • 1/3 cup (80 ml) cranberry sauce (whole berry or jellied)
  • 1 large egg, beaten with 1 tablespoon of water (for egg wash)
  • Flaky sea salt, for sprinkling
  • Fresh rosemary or thyme, finely chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Unfold the thawed puff pastry sheet on a lightly floured cutting board. Cut into 16 roughly 2-inch squares using a sharp knife or pizza cutter.
  3. Transfer the squares to the prepared baking sheet, spacing them about 1 inch apart. Use a fork to prick the center of each square a few times (dock the centers).
  4. Drop about 1 teaspoon of cranberry sauce into the center of each pastry square, spreading slightly but leaving a small border.
  5. Place one cube of brie on top of the cranberry sauce, pressing down gently.
  6. Brush the exposed pastry edges with the beaten egg wash. Sprinkle a tiny pinch of flaky sea salt over each bite. Add fresh herbs if using.
  7. Bake for 12-15 minutes, until the pastry is puffed and deeply golden brown and the brie is melted and bubbling. Rotate the pan halfway through if needed.
  8. Let the bites cool on the baking sheet for 2-3 minutes before transferring to a serving platter. Serve warm.

Notes

Keep the pastry cold for best flakiness. Don’t overfill with cranberry sauce or brie. Docking the pastry centers prevents them from puffing up too much. For a gluten-free version, use gluten-free puff pastry. For an air fryer method, cook at 350°F (175°C) for 6-8 minutes. Leftovers can be stored in an airtight container in the fridge for up to 3 days; reheat in a 350°F oven for 5 minutes.
