  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 oz) red enchilada sauce
  • 1 can (4 oz) diced green chiles
  • 1/2 cup (60g) shredded Mexican blend cheese
  • Fresh cilantro, for garnish
  • Optional: sour cream, diced avocado, pickled onions, or hot sauce for serving

Instructions

  1. Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, combine panko breadcrumbs and milk. Let sit for 5 minutes until a paste forms (panade).
  3. Grate the onion on a microplane or box grater to get about 1/4 cup of onion juice and pulp.
  4. Add ground turkey, grated onion, beaten egg, minced garlic, taco seasoning, salt, and pepper to the panade. Mix gently with hands or a fork until just combined. Do not overmix.
  5. Using a 1.5-tablespoon cookie scoop or hands, form mixture into 20-24 uniform meatballs. Place on prepared baking sheet, spacing about 1 inch apart.
  6. Bake for 15-18 minutes, until cooked through and lightly golden (internal temperature 165°F / 74°C).
  7. While meatballs bake, combine enchilada sauce and diced green chiles in a medium saucepan over medium heat. Bring to a gentle simmer, then reduce heat to low.
  8. Transfer baked meatballs to the simmering sauce. Gently stir to coat. Simmer for 5 minutes, allowing flavors to meld.
  9. Sprinkle shredded cheese over the top, cover, and let sit for 1-2 minutes until cheese melts. Garnish with fresh cilantro and serve.

Notes

For freezing: After baking, let meatballs cool completely, then freeze in a single layer before transferring to a freezer bag. To reheat from frozen, simmer in sauce for 15-20 minutes. The panade (breadcrumb-milk paste) is essential for moist meatballs. Grate the onion instead of chopping for better texture.
