A quick and easy homemade pumpkin spice syrup that adds cozy fall flavors to your coffee in just 5 minutes using simple pantry ingredients.

  • ½ cup (120 ml) pumpkin puree (not pumpkin pie filling)
  • 1 cup (200 g) brown sugar
  • 1 cup (240 ml) water
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Combine 1 cup brown sugar, 1 cup water, and ½ cup pumpkin puree in a small saucepan and whisk until smooth.
  2. Stir in 1 teaspoon ground cinnamon, ½ teaspoon ground nutmeg, ¼ teaspoon ground cloves, and a pinch of salt. Whisk well to incorporate.
  3. Place the saucepan over medium heat and bring the mixture just to a gentle simmer, watching closely to prevent boiling over.
  4. Reduce heat to low and simmer for 3 to 4 minutes, stirring frequently until the syrup thickens slightly to a light honey consistency.
  5. Remove from heat and stir in 1 teaspoon vanilla extract.
  6. Let the syrup cool for 10 minutes. Optionally, strain through a fine mesh strainer into a heatproof jar for a smoother texture.
  7. Seal the container and refrigerate. Shake before each use as natural settling may occur.

Notes

Do not skip the simmer step to fully dissolve sugar and bloom spices. Use fresh spices for best flavor. Stir constantly to prevent burning. If syrup thickens too much after refrigeration, stir in a splash of hot water before use. Shake well before each use to remix settled pumpkin bits.
