Instructions

  1. Prepare the shrimp: If using frozen shrimp, thaw them overnight in the refrigerator or under cold running water for about 10 minutes. Pat very dry with paper towels. Place in a medium bowl, drizzle with olive oil, and sprinkle with salt and pepper. Toss gently to coat.
  2. Make the glaze: In a small bowl, whisk together honey, minced garlic, soy sauce, rice vinegar, sesame oil (if using), and red pepper flakes (if using). Taste and adjust honey or soy sauce to preference.
  3. Thread the skewers: Divide shrimp evenly among 4 to 6 skewers, threading through the thickest part. Leave a small space between each shrimp. If using wooden skewers, soak in water for at least 30 minutes first.
  4. Preheat the grill: Heat grill to medium-high heat (400°F to 450°F). Clean and oil the grates well with a paper towel dipped in vegetable oil held with tongs.
