A quick and easy grilled cheese sandwich featuring tart-sweet Honeycrisp apples and sharp white cheddar on crispy sourdough bread. Perfect for a fast lunch or impressing guests with minimal effort.

  • 8 slices sourdough bread
  • 8 ounces sharp white cheddar cheese, thinly sliced
  • 2 medium Honeycrisp apples, cored and thinly sliced (about 1/8-inch thick)
  • 4 tablespoons unsalted butter, softened
  • 1 tablespoon fresh lemon juice
  • Pinch of fine sea salt
  • 2 tablespoons honey or maple syrup (optional)
  • 1/4 cup caramelized onions (optional)
  • Fresh thyme leaves (optional)
  • Dijon mustard (optional)

Instructions

  1. Core the Honeycrisp apples (no need to peel) and slice into thin rounds, about 1/8-inch thick. Place slices in a small bowl and toss with lemon juice and a tiny pinch of salt. Set aside.
  2. Lay 8 slices of sourdough on a clean work surface. Spread a thin, even layer of softened butter on one side of each slice (about 1/2 tablespoon per slice).
  3. Flip 4 slices over so the buttered side faces down. Layer on the sliced cheddar cheese, dividing evenly. Arrange apple slices on top of the cheese, overlapping slightly. Add any optional add-ins (honey, caramelized onions, fresh thyme, or Dijon mustard) if desired. Top with remaining 4 bread slices, buttered side up.
  4. Place a large non-stick skillet or cast iron pan over medium heat and let it heat for about 2 minutes (until a few drops of water sizzle and evaporate immediately).
  5. Carefully place 2 sandwiches in the pan (or as many as fit without overcrowding). Press down gently with a spatula. Cook for 3-4 minutes, until the bottom is golden brown and crispy.
  6. Flip the sandwiches carefully. Press down gently again. Cook for another 3-4 minutes, until the second side is golden brown and the cheese is fully melted. If bread browns too quickly, reduce heat and cover pan with a lid for the last minute.
  7. Transfer cooked sandwiches to a cutting board and let rest for 1-2 minutes. Slice diagonally and serve immediately.
  8. Repeat with remaining sandwiches. Wipe out pan between batches if needed. Keep finished sandwiches warm on a baking sheet in a 200°F oven.

Notes

Use medium heat to avoid burning the bread before the cheese melts. For extra-crispy crust, press down gently on the sandwich after flipping and hold for 10 seconds. If making for a crowd, assemble sandwiches up to 4 hours ahead and refrigerate; cook in batches and keep warm in a 200°F oven. Leftovers can be refrigerated for up to 2 days and reheated in a skillet or air fryer (avoid microwave).
