A creamy, no-cook breakfast that tastes like a treat but is packed with wholesome ingredients. Perfect for busy mornings, this recipe combines rolled oats, peanut butter, and banana for a pudding-like texture that kids and adults love.

Ingredients

Scale
  • 1 cup (80g) rolled oats
  • 1 cup (240ml) milk of your choice (whole, 2%, or unsweetened plant-based)
  • 1/4 cup (60g) creamy peanut butter (no-stir variety recommended)
  • 1 large ripe banana, mashed (about 1/2 cup / 120g)
  • 1 tablespoon (15ml) maple syrup or honey (optional, adjust to taste)
  • 1/2 teaspoon vanilla extract
  • 1 pinch of salt
  • For topping (optional): sliced banana, drizzle of peanut butter, chia seeds or flax seeds, chocolate chips

Instructions

  1. In a mason jar or small bowl, mash the ripe banana with a fork until mostly smooth with a few small lumps.
  2. Add the milk, peanut butter, maple syrup (if using), and vanilla extract. Stir until the peanut butter is mostly incorporated.
  3. Add the rolled oats and a pinch of salt. Stir until all ingredients are well combined and oats are submerged.
  4. Seal the jar or cover the bowl with plastic wrap. Refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  5. In the morning, stir the oats. If too thick, add a splash of milk. Top with desired toppings and serve cold or at room temperature.

Notes

Use rolled oats (not quick or steel-cut) for best texture. A ripe, spotty banana adds natural sweetness. For a nut-free version, substitute sunflower seed butter. Oats keep in the fridge for up to 3 days; do not freeze.
